Roasted nut butter

Mixed nut butter is a great way to diversify the number of plant based foods you’re consuming every week. Change up the nuts you use every time you make it. Nuts are also great for blood sugar balance because of their protein and fat content.

Ingredients

  • 250g of mixed nuts (almonds, cashews and hazelnuts for example)
  • Sea salt

Method

  • Preheat the oven to 180°C.
  • Arrange the nuts on a baking sheet and roast in the oven for about 10 minutes until fragrant.
  • Leave to cool then transfer to a food processor. Blitz for about 15 minutes in total until a smooth nut butter forms. You’ll need to stop the processor now and again to scrape down the sides with a spatula.
  • Spoon into a sterilised jar and sprinkle with a good pinch of sea salt.
