This warming 3 bean stew is a great plant-based option that’s packed full of protein.
Ingredients
Serves 4
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp of harissa paste
- 1 tbsp of dijon mustard
- 1 tsp of dried oregano
- 1x 400g jar of chopped tomatoes
- 1 tsp of maple syrup
- 1x 400g jar of cannellini beans, drained
- 1x 400g jar of black beans, drained
- 1x 400g jar of butter beans, drained
- 1 large bunch of kale, chopped
- Extra virgin olive oil
- Salt and pepper
Method
- Preheat the oven to 190°C
- Add some olive oil to a pan, add the onion and cook on a low heat for a few minutes until beginning to soften. Add the garlic and cook for 1 more minute.
- Add the harissa paste, mustard, oregano, tomatoes, maple syrup and the beans and mix well to combine. Season with salt and pepper
- Bring up to a simmer, then continue to let it simmer for 15 minutes.
- While that’s cooking, massage the kale with 1 tbsp of extra virgin olive oil and salt, and place in the oven for 8-10 minutes until crispy.
- When the beans are ready, serve into bowls and cover with the crispy kale.
Serving suggestions
- Add some sliced avocado and a sprinkling of feta cheese for some added healthy fats.
