Baked eggs in avocado

A great high-protein, high fat breakfast to start your day off in the best way possible. This dish will keep cravings away, and stabilise your energy and mood.

Ingredients

Serves 2

  • 2 medium sized avocados (ripe)
  • 4 organic, free range medium eggs
  • Pico de Gallo or chilli flakes
  • Salt and freshly ground pepper

Method

  • Preheat the oven to 200°C
  • Slice each avocado in half and remove the stones. Make the hole a bit bigger by using a spoon to scoop out a small amount of avocado flesh (feel free to eat the excess!)
  • Crack an egg into each avocado half, season with salt and pepper. 
  • Place the avocado halves in the oven and bake for 15 minutes (or until the yolks reach your preferred consistency).
  • Cover with chilli flakes or Pico de Gallo and enjoy!

Serving suggestions

  • If you’re having an active day, pair this with a slice of The Best Gluten Free Bread or Rye Sourdough and some organic butter.
