A great high-protein, high fat breakfast to start your day off in the best way possible. This dish will keep cravings away, and stabilise your energy and mood.
Ingredients

- 2 medium sized avocados (ripe)
- 4 organic, free range medium eggs
- Pico de Gallo or chilli flakes
- Salt and freshly ground pepper
Method
- Preheat the oven to 200°C
- Slice each avocado in half and remove the stones. Make the hole a bit bigger by using a spoon to scoop out a small amount of avocado flesh (feel free to eat the excess!)
- Crack an egg into each avocado half, season with salt and pepper.Â
- Place the avocado halves in the oven and bake for 15 minutes (or until the yolks reach your preferred consistency).
- Cover with chilli flakes or Pico de Gallo and enjoy!
