These flaxseed crackers are crispy and delicious. Seeds are full of healthy fats, vitamins and minerals and flaxseeds in particular are great for gut health because of their insoluble fibre content.
Ingredients
- 125g flaxseeds
- 50g sunflower seeds
- 50g pumpkin seeds
- 25 sesame seeds
- 1 tablespoons tomato puree
- 1 tsp fennel seeds (or other herbs/spices)
- Salt and pepper
Method
- Preheat the oven to 180°C and line a baking tray with baking paper.
- Mix all the seeds, the tomato purée and 180ml water in a bowl and leave for 15 minutes for the seeds to absorb some of the liquid.
- Add the fennel seeds, salt and pepper, transfer to the lined baking tray and press down with the back of a spoon into an even layer, as thin as possible.
- Bake for about 25–30 minutes until just golden. Leave to cool completely on a wire rack, where it will crisp further as it cools, then break up into pieces.
