This 3 root mash is a great alternative to traditional mashed potato. By adding in celeriac and parsnips, it increases in the diversity for your gut microbiome.

Ingredients
- 1 small celeriac, peeled and cut into 1-inch cubes
- 2 medium-sized parsnips, peeled and cut into 1-inch cubes
- 1 medium sized potato, peeled and quartered
- 2 tbsp of grated pecorino cheese (optional)
- 2 tbsp of butter
- 1 and 1/2 tsp of Dijon mustard
- Salt and freshly ground black pepper
Method
- Place the celeriac and parsnips into a large saucepan and submerge in water, adding a large pinch of salt. After 15 minutes, add in the potato and continue to cook for a further 20 minutes, or until soft when pierced with a fork.
- Drain the vegetables and mash with a potato masher, or blend in a food processor.
- Stir in the butter, mustard and season generously.
