3 root mash

This 3 root mash is a great alternative to traditional mashed potato. By adding in celeriac and parsnips, it increases in the diversity for your gut microbiome.

Recipe

Serves 4

Ingredients

  • 1 small celeriac, peeled and cut into 1-inch cubes
  • 2 medium-sized parsnips, peeled and cut into 1-inch cubes
  • 1 medium sized potato, peeled and quartered
  • 2 tbsp of grated pecorino cheese (optional)
  • 2 tbsp of butter
  • 1 and 1/2 tsp of Dijon mustard
  • Salt and freshly ground black pepper

Method

  • Place the celeriac and parsnips into a large saucepan and submerge in water, adding a large pinch of salt. After 15 minutes, add in the potato and continue to cook for a further 20 minutes, or until soft when pierced with a fork.
  • Drain the vegetables and mash with a potato masher, or blend in a food processor.
  • Stir in the butter, mustard and season generously.

Serving suggestions

3 root mash makes a great side dish for our Cod, Olive and Tomato Stew or Chicken Strogonoff.
