This decadent smoked salmon french toast is the perfect start to the weekend. It’s packed full of protein and healthy fats for happy hormones.
Salmon is one of the best sources of omega-3, which keeps our cells healthy and lowers inflammation.
Ingredients
Serves 2
- 2 eggs
- 1/2 cup organic milk (or unsweetened plant-based milk if dairy-free)
- 2 tbsp of finely grated pecorino cheese
- 4 slices of our Rye Sourdough or The Best Gluten Free Bread, with crusts removed
- 50g butter
- 1 large handful of fresh flat-leaved parsley
- 1 large handful of fresh dill
- 1 small lemon, zested
- 2 tbsp of capers (drained)
- 1 shallot, thinly sliced
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 cup of greek yoghurt (or unsweetened coconut yoghurt if dairy free)
- 300g smoked salmon
Method
- Whisk the eggs, milk and pecorino in a shallow dish. Season with salt and pepper.
- Melt half the butter in a large frying pan over a medium heat. Dip 2 slices of your chosen bread into the egg mixture until soaked, draining any excess. Cook the bread for 2 to 3 minutes each side in the frying pan until golden. Repeat with remaining bread slices, egg mixture and butter.
- Mix the parsley, dill, lemon zest, capers and shallot in a small bowl with the olive oil, coconut yoghurt and lemon juice. Season with salt and pepper.Â
- Divide the slices of french toast between 2 serving plates. Top each with smoked salmon and the yoghurt mixture. Enjoy!
