Blueberry Pancakes

We love a high protein breakfast but sometimes you need to satisfy a sweet tooth – and this does both! These blueberry pancakes are great for a lazy Saturday morning.

Berries are packed with phytonutrients, which are great for gut health, as well as other antioxidants such as vitamin C.

RECIPE

Serves 1

INGREDIENTS

  • 2 tbsp butter or coconut oil
  • 3 eggs
  • 1 scoop of vanilla or chocolate protein powder (we like Planet Paleo bone broth powder)
  • 10g of collagen powder
  • 75-100g berries
  • 1 tablespoon of natural yogurt (or coconut yoghurt if dairy free)

METHOD

Melt the butter or coconut oil in a pan.

Mix the eggs and powders up in a bowl until well mixed, it should look thick and lumpy.

Pour some batter into the pan, then add a few berries while cooking.

Cook for 2-3 minutes on each side, repeating for each pancake.

Once cooked, pop on a plate add a big dollop of yogurt.
