Chocolate pudding

This pudding is so simple to make but tastes delicious and decadent. Gelatin is great for gut health, bones, joints and skin. It is a rich food source of the amino acid glycine, which is important for sleep and brain health, and more, but which many of us don’t get enough of in our modern diets.

RECIPE

Serves 4

INGREDIENTS

  • 500ml coconut milk 
  • 1 tablespoon high-quality unflavoured powdered gelatin
  • 100g dark chocolate (75% cocoa solids or higher)
  • ½ tsp vanilla extract
  • Pinch of sea salt

METHOD

Reserve 2 tablespoons of the coconut milk. Pour the rest into a heavy-based saucepan and heat gently over a low heat.

In a separate small pan, mix the reserved coconut milk with the gelatin over a low heat. Stir continuously until dissolved, then set aside.

Add the chocolate to the coconut milk and whisk constantly until it melts completely and the mixture is smooth.

Add the gelatin mixture to the chocolate mixture, pouring it in slowly while you whisk. Take the pan off the heat and whisk in the vanilla extract.

Pour into bowls or cups and chill for at least 2 hours, or until set. Sprinkle with salt before serving.
