Berry Chia Pudding

Berry chia pudding

Make this the night before for an instant breakfast the next morning. Try playing around with the flavours too, there are endless options.

Recipe

Serves 4

Ingredients

  • 1 tin coconut milk
  • 250g berries of your choice (can be fresh or frozen)
  • 6 tablespoons chia seeds
  • 1 tablespoon honey or maple syrup (optional)

To serve:

  • 1 tbsp nut or seed butter per person
  • Yogurt or coconut yogurt
  • Fresh berries

Method

Blend everything together in a food processor or blender then transfer to a bowl or individual cups/ramekins. 

Place in the fridge overnight or for at least 4 hours.

Just before serving, add the nut butter, yogurt and fresh berries.
